Choosing the right carboy size depends on your stage of fermentation:
- 6.5- and 7-gallon carboys are best for primary fermentation of 5-gallon batches, providing headspace to contain krausen during active fermentation.
- 5-gallon carboys are ideal for secondary fermentation, minimizing excess airspace to reduce oxidation risks.
