a bubbling monster

We used 1275 when we brewed the Australian Sparkling Ale kit from here on NorthernBrewer.com. We had a... miscommunication and wound up having to smack the pack more/less at the last minute, just a little bit before we actually got down to business. That pack inflated super fast and even though it had been only the minimum 4 hours, I felt just fine pitching when the time came. We had bubbles in the airlock within a few hours and within about 48 hours, we had krauzen overflowing right out of the airlock. (I'd never had that happen before and certainly wasn't expecting it...) Consider using a blow-off tube with this yeast.Flavor-wise, it gave a nice sweetness and a light body. Very positive experience; I'd use it again.
