My favorite brew is Rocky Raccoon's Crystal Honey Lager, but depending on the batch of hops, it can be a little too bitter for my wife. A pound of crystal malt in the boil smooths out the bitterness a little, and improves the head, which is otherwise rather flat. A friend who brews tried this addition, and now RRCHL is one of his favorites. I'll be back (to buy more).
