It's brown, it's named after a large North American ungulate, and its name suggests oral incontinence. Ah, we market products with our minds, but we drink beer with our mouths! Which is why this American brown ale is sure to be your new favorite session beer.

Hard to believe so many enticing flavors can come from one beer recipe kit. But brew up a batch of Caribou Slobber and you'll find dense, drool-worthy layers of malt, caramel, baking chocolate, and a hint of light-roast coffee give way to reveal a hop character that will surprise you if you're used to drinking English brown ale.

The finish is complex but balanced, and the gravity is not so high as to keep you from having another.

Easy to brew, easy to drink

Caribou Slobber is my first attempt at home brewing. This was a pretty easy recipe to make and I brewed on a day that was below zero outside so to cool down the wort all I had to do is stick the kettle outside and let mature cool down the kettle. I bottled two weeks after secondary fermentation using conventional bottles, grolsch bottles, a crowler, and a growler. I conditioned the beer for a week and tried one just to see how it turned out. It was clear, had good carbonation and tasted like a brown ale should. Not bad for a first timer. I used the fast pitch and started the yeast 24 hours prior to brewing and also used the canned sugar solution when bottling. Both kid those products were easy to use although I can’t say if they work better than conventional methods or not. I will continue to use them for my next batch. Easy to follow recipe and good results- I’m sold.

White mold problem

I've brewed 166 five gallon batches of beer, mead, and selzor. About a year ago I began running into a white mold problem that affects some beers but not others. Since Northern Brewer took away their help line, I've lost over 5 batches with no end in sight. Buying freash OYL-012 seems to have only a 50 percent success rate. What a shame. Caribou Slobber was my first beer. It has wide appeal to lovers of ales and IPAs. But if you get white mold the batch is spoiled and you'll have to dump it. By-the-way, I use One-Step on everything the beer touches, and try to minimize air exposure during racking, so those are probably not the problem areas. While Omega Yeast yields a superior taste profile, I'm beginning to question the purity of the product. Sure wish someone could provide real help.
