Our annual Christmas beer

We’ve enjoyed Christmas beers for as long as I can remember %28Anchor Steam and later Great Lakes in Cleveland%29 so brewing our own was a must. For something we enjoy only at the holidays it has to be big and bold in flavor and this one doesn’t disappoint. For the last few years we’ve been going with the full packet of spices %28rather than the half suggested%29 and it really helps to let this one condition a month or two before serving so the flavors balance. This is true for both bottles %28as we did the first years%29 and kegs %28as we’ve done lately%29. As such we aim to brew it around August to put on tap after Thanksgiving %28but we have had later starts and it was still enjoyable with less conditioning but was even more enjoyable later after it had some age%29. %0D%0AAnother lesson learned%2C while I love our catalyst fermenter%2C for most brews the cloves and other spices aren’t a good mix with its bottom drain funnel %28clogs%29 so I do this one in my Big Mouth Bubbler or a simple 6 gallon carboy with a siphon to make transfer to secondary easier.

Haven't tried it yet - it's still in secondary - but the fermentation blew the cap off my Bigmouth Bubbler! Luckily my Northern Brewer starter kit included a blowoff tube and no harm was done.
