Tasting Notes
  • Aroma: Moderate malt aromas of fresh bread crust. Dominant passionfruit, citrus, dark stone fruits with supporting but subdued notes of floral and herbal earthiness.
  • Appearance: Brilliant golden straw to light orange color with good clarity. Bright white foam head with moderate lacing.
  • Flavor: Smooth, clean bready malt character with hints of crackers. Prominent tropical fruit flavors with undertones of tangerine like citrus and a very faint spiciness. Moderate to low alcohol sweetness.
  • Mouthfeel: Medium body with a smooth, long finish with fading bitterness as the sip is swallowed.
  • Overall Impression: A really well-balanced hop-forward ale with a perfect supporting malt background. Fruity in flavor and both fruity and earthy aroma.

Tasmanian Devil IPA is a showcase of clean malt character and the bold flavors of Australian hops and ale yeast. 3 ounces of Galaxy hops provide this recipe with awesome hop flavors and aromas of prominent citrus, tropical fruit, and faint earthiness. Coupled with exclusive White Labs Yeast Vault Australian Ale yeast specially ordered just for this recipe kit, the resulting beer is stunningly complex. This great yeast strain is a bit of a beast, boasting relatively high attenuation to dry the beer out, good flocculation characteristics to produce a clear beer, and restrained flavors to let the grain bill and hop charges really stand out.

Tasmanian Devil Australian IPA

This was a rush job for a party 3 weeks out. Temps in my area 90+ but brew day 80's and 3-4 days after. Visible fermentation slowed after 3 days , racked to secondary and dry hopped final ounce of hops after 7 days. 5 days later kegged and refrigerated, next day added gelatin to clarify (cloudy) had an inch of sediment in secondary. Slight pressure in keg indicates fermentation still on going. Poured some next day to sample and pull off spent yeast gelatin muck from bottom , good - hoppy - fruity . Next day shook with 30 lbs. Co2 in morning and tapped at party at 3. The gelatin plugged the dip tube even with 40 psi. so I removed the corny lid and dipped the cups, best dipp'n beer ever ! Paired well with the 95 deg. and 85% humidity.

Third time's the charm

This was my first opportunity to purchase this rare Limited Release Tasmanian Devil Australian IPA kit from Northern Brewer, and yes, I was able to do so on the third try. I received the email at work and purchased it right on the spot... It sells out that fast! Having just poured and tasted this fabulous beer; which I bottle conditioned, I see why it's in such high demand. I purchased the all-grain version and I am very pleased with the results. Just the right amount of bitterness and I love the unique flavor and aroma of the Australian Galaxy hops. I was concerned about the Australian Ale yeast arriving safely in the heat of summer. It was flocculating in the vial, but thankfully really took off in my 2L starter of Fast Pitch® Canned Wort. I look forward to brewing it again next year!
