Hit the mark

I made a Blackberry Kolsch and it turned out really well. It became the one beer that my friends would repeatedly request. I used a can of the puree along with the flavor extract. I am 2 for 2 on this one. I had done it once before with only the puree and it was just ok.

Added a full bottle to 5 gallons, and added 16 oz of crushed fresh berries at secondary fermentation.

Blackberry Flavor Extract

I added 3 tbsp of the Extract per quart. After letting it muddle about ten days: good nose, firm but not overbearing blackberry sweetness. I would recommend this extract as the only way to improve on the extract would be the time consuming process of making it myself. This was very simple to use and a good result.

Added to 6 gal of Merlot. I should have stopped at 2 oz but I added all 4 oz. It really ramped up the blackberry flavor. My freinds loved it as they love blackberry but it was a little too much for me. Still tasted good, but 2 oz would have been perfect. Will add again in the next batch. maybe a hint of chocolate too.
