Gulo Ale is the latest creation to emerge from the curious minds of Omega Yeast. The progeny of Irish Ale (OYL-005) and French Saison (OYL-026), this true genetic hybrid is a beast at devouring sugars, which creates a very dry beer without any of the peppery, clove phenolics associated with saisons and Belgian ales. Expect a citrus-forward aroma with hints of peach and a clean finish. Gulo Ale excels in any style where a high level of attenuation is desired without phenolics. We love using it in an IPA (including a brut IPA), stout, or Bière de Garde.

This strain tests positive for the STA1 gene, an indicator of Saccharomyces cerevisiae var. diastaticus, and is capable of fermenting dextrins, resulting in very high attenuation.

Just Peachy

I've fermented a few times with Gulo, each time with success. I received the yeast pack from Northern Brewer in good condition, each time having made a starter before brew day. It ferments as quickly as a traditional French saison strain and with similarly high attenuation. The best part: Gulo throws off a distinct peach ester, especially when fermented on the warm side of its range (I usually pitch at 68F and let free rise to 73-74 for the first three days, then ramp to 77F to finish out). Gulo is fairly non-flocculant in my experience, so you can make a NEIPA with it, but you may want to increase your mash temp to account for the high attenuation. Broadly speaking, I recommend Gulo for pale ale, IPA, black IPA, brut IPA, American barleywine/stout/red ale, biere de garde, and in blends with stone-fruity English strains or with Belgian Trappist and Abbey yeasts for Belgian beers that are intended to emphasize esters over phenols.

it kind of tasted like a kviek version of us-05. it did not blow my socks off, but that is probably because i did not use it for it's intentions.
