Fantastic German yeast

I've used this multiple times to make various German styles- Helles, Festbier, Dunkel. All with 34/70--two packets sprinkled over the wort for a 6 gallon batch with no aeration or oxygenation needed for this dry yeast, fermented at 66°F for 12 days, plus 2 days for chilling, clarifying, and keg carbonating. Every time they've come out really really good, according to me and many others, without long lagering. I'm not kidding. If you haven't tried 34/70 this way, you should!

I used 34/70 in a corney keg with a spunding valve, and the results were perfect. I dumped half of the slurry down the drain in the tub, and carefully tried to save the "tilt" hydrometer. I wanted to reach in, and save the hydrometer, then I realized I might want to reuse the yeast, so I just dumped the next batch on top. I have been just cloning out the yeast for months. This stuff maintains its integrity (after 10 or more batches). I bought another couple to have in the fridge for the next lockdown. I have a lot of malt, a fair amount of hops, and my yeast is covered. I am GOOD TO GO...

Go to lager yeast for clean well attenuated lagers. Does very well from about 52 - 60 degrees. Usually employ a diacetyl rest of 60 - 62 degrees. Always make a starter, aerate, and use yeast nutrient and never have a problem with yeast health.
