A note on yeast: Tallgrass uses White Labs WLP007 Dry English Ale; with Tallgrassblessing, we suggest Wyeast 1098 as the default option so customers (especially mail order customers) can more easily evaluate viability before brewing.

We strongly recommend ordering dry yeast in the summer months. We do include complimentary ice packs with all liquid yeasts, but it is difficult to guarantee that the ice packs will survive the trip given transit times and particularly hot temperatures.

The Buffalo Sweat kit turned out great. I used the recommended Wyeast 1098 with a starter. It fermented quickly and aggressively. I was able to get a six pack of the real thing (now brewed by Wichita Brewing Company) for an actual comparison. My brew turned out a little sweeter with more carbonation (which I like) as compared to a slightly drier finish on the commercial product. Overall, I am very pleased and will definitely brew it again.

This was 3rd time brewing.It is awesome at 4 weeks but 6 weeks is perfect.Im doing another for Christmas

Awesome Stout

I have brewed this several times. The last 3 times I have added 4 oz of cacao nibs in the secondary for 2 weeks. I'm an IPA junkie but I do like almost everything . My wife doesn't like IPA'S but loves stouts, porters and pilsner. She always asks for the Buffalo Sweat! I think I will use 6 oz of nibs next time and 2 or 3 vanilla beans. This is an excellent recipe by itself also.
