Plinian Legacy - so many hops!

The outrageous amount of hops had me worried when I brewed my Plinian Legacy. I had a hard time transferring the wort from my brew kettle to my fermenter due to all the hops. When I dumped the trub out of my conical fermenter at 2 weeks, I had to use a spatula to dig it out it was so thick. Then dry-hopping adding even more hops and in the end it was a lot cloudier than I wanted. Since I don't have the right gear to cold crash yet, I transferred it to a bottling bucket 24 hours before bottling and put it in my refrigerator. When I bottled, it was a lot clearer than expected. I also took a taste and it was extremely promising! I can't wait to try it in a few weeks when it's carbonated!

Nice tasting, high alc beer

Finally got a chance to taste it yesterday. Doesn’t taste much like Pliney the elder but it is a nice tasty crisp beer. I ended up with about 8.66% alcohol. Color is a darker golden. I added about twice The amount of corn sugar necessary and used all of the hops provided. I still believe it has to mature more but it’s absolutely tasty the way it is after six weeks.

Best brew yet

This kit is awesome. The directions were very specific, however the one thing I would recommend to any brewer is to always go with a full boil rather than adding in water later in the wort cooling phase. I started this with just shy of 6 gallons of water and sweated off about a gallon in the brew process. My ABV at the end was right in range at 8.6% and this DIPA had an awesome hop forward flavor profile and a pretty smooth finish overall considering the high ABV. I’ve since ordered it again. I recommend using Wyeast liquid ale 1056 and doing a starter. I also pitched two packs of yeast. There’s a ton of fermentable sugar in this one.
