Nice kit, be careful of the IBU's

I used my brewing software to adjust the hop boil times for an estimated 54 IBU's. That number equals the 1.054 starting gravity estimated by the software. I find this IBU/STARTING GRAVITY ratio a safe place for hoppy beers. If I boiled all hops as per the instructions, IBU's would have been quite a bit higher. If you like massive bitterness, go for it. I would order an extra muslin bag with this kit. The grain bill is too large for 1 bag, which hurts the extraction rate.

Fast brew

I got this kit because it is one of the fastest brews. It is good and if you like strong hoppy flavor, you will like it. To me, it is maybe too bitter.

It is All My Fault

Dear Family in Hops- Great Red Ale! Easy to brew, quick and easy. I know that I could not come up with a recipe as good, so I leave it to the professionals. I am in Florida, high temps already- 90 + so I put the second ferment in the converted milk cooler, like the ones in the Woolworths lunch counter, set the digital thermostat to 75 degrees and waited. A Corny Keg gasket failure left me with no carbonation, so I forced it at a too high of pressure, and have been dealing with too much foam ever since. Makes me be patient to let the foam settle. All is good. Am ordering again tonight. Relax, have a Homebrew! G.Z.
