Wyeast 4184 Sweet Mead
Wyeast 4184 Sweet Mead yeast is one of two strains for sweet mead making. Leaves 2-3% residual sugar in most meads. Rich, fruity profile complements fruit-mead fermentation. Use additional nutrients for mead making. Ciders, Cysers, Fruit Wines, Ginger Ale, Cherry, Raspberry, Peach. Temperature Range: 60-75 F. Alcohol Tolerance: 11%.

Many reviews had stated this yeast was slow to start or didn't work at all. I found it worked quite well. I followed package directions and it worked great on a Plum Sweet Mead. I do wish it was a bit cheaper but if the final taste was definitely better than with the yeast I had used in the past.
I've brewed about 20 - one gallon batches using dry yeast with no problem; however, I wanted to try something where I could have some residual sugars left at the finish. After three days, zero evidence of fermentation. Ended up re-pitching EC-1118. Hoping I'm not out $60 worth of honey.

It works well if you can get it to keep going! I split the packet equally into 2 one gallon test batches and one fermented perfectly to completion and finished just where I wanted it, and the other stalled and then eventually just stopped after only fermenting about 1% of the total sugar in my batch. So it’s as I’ve read online, it’s a finicky strain of yeast but if you can get it to work it comes out really well!
The yeast is a hearty yeast. I use to get more cold packs with my shipment and the last one had only one ace the yeast was hot and mostly dead. Fortunately with a combination of the starter pack and some home laboratory work I was able to save the remaining live yeast and grow a inoculation yeast for my 5 gallon batch.
