Wyeast 4184 Sweet Mead yeast is one of two strains for sweet mead making. Leaves 2-3% residual sugar in most meads. Rich, fruity profile complements fruit-mead fermentation. Use additional nutrients for mead making. Ciders, Cysers, Fruit Wines, Ginger Ale, Cherry, Raspberry, Peach. Temperature Range: 60-75 F. Alcohol Tolerance: 11%.

Fast Ferment 3 gallon - Tangerine Mead

I've used this yeast twice for melomel and both times it required a little more heat than I anticipated to get it going. One batch is still fermenting the other - the tangerine - came out really nice. I used the full pack of yeast for approximately 3 gallons and there was a lot of yeast in the bottom of the fermenter when it was done. The flavor is nice and I'm looking forward to how my 1 gallon of pineapple will turn out. For that I used about half the package.

Good yeast, but...

I did four 1 gallon batches by dividing the Wyeast pouch into 4 equal portions.(Pouch says its for up to 6 gallons). This yeast is working well for my 2 traditional meads but my pomegranate mead was a very sluggish start and my cranberry showed NO signs of fermentation after 48 hours. I think that high acidity may be a problem for this yeast so adjust your recipe if needed.

Sweet Mead Yeast

The yeast got off to a slower start then I thought, but I realized my basement was down to 60 F. Put on my heater, brought it up to 66 to 68 F, and BOOM, got going great. In the secondary now, and still have some activity. But not a worry, as I won't be drinking it for another 10 months.
