2.5° L. Phenol level 12-24. While the malt is in the kiln, peat moss outside the kiln is gently smoked over slow burning coals allowing its vapors to drift above the malt. Peat malt is used in the distilling of Scotland's finest whiskies, but has found favor with homebrewers and craft brewers in smoked beers. Adds intense iodine and seaweed smoke phenol character - a little goes a long way!

A little goes a long way
Seriously, more than a couple ounces in any medium-weight brew will risk tasting like an Islay Scotch, i.e., very medicinal.

I used it in my own Scotch Ale and it came out perfect with just 2oz.

Nice but looking for more peaty smell
I am not sure if it is me. I had crushed previously and it had a more intense peaty smell. The whole did not. That being said, I still think it is a great product.

Simpsons Peated Malt
I have never used Simpsons Peated Malt in a beer recipe before. The reason I ordered this item was to use it in a Scottish Ale I've been wanting to make. The item was as described, came on time, and gave to the beer the flavors I desired. I will be transferring from my primary to my secondary fermenter today. After this beer is bottled and served I feel it will be a keeper.

Everyone talks about using 2 oz. what is that in percent of your grain bill? 2 oz in a 1050 beer and 2 oz in a 1080 beer are two different things.

BEST ANSWER: While dialing in my wee heavy recipe, I've used as much as a 1/4 lb in 1.110 and found it too strong. I now regularly use an 1/8 lb (2 oz) along with an 1/8 lb Briess cherry smoked malt to get a rich earthy peat flavor without the harsh edges. With an OG of 1.110, 2 oz is about 0.59% by weight or 0.41% by gravity.
is this smoked to a specific phenol level?

BEST ANSWER: The packaging and advertising via northern brewer doesn't state to what phenol level this malt is smoked. You will have to contact Simpson Malts to determine this level. I use it for brewing old world style Ales and Porters both Irish and Norwegian to great effect. -August
Is this the light, medium or heavy smoked version of the peated malts simpson produces?

BEST ANSWER: I have not compared this malt to to other pleated malts, but use it regularly in beer brewing. The advertisement says a little goes a long way. I wouldn't use more than a pound per 5 gallon batch personally. A pound in a stout gives a great smoked flavor without totally killing it for example. -August
