From Brew Day to Tap in 2 Weeks
Traditional hard seltzer takes about 6 weeks—2 to ferment, 2 to clear, and 2 more to carbonate in bottles. But if you’re kegging, you can cut that timeline down to just 14 days from brew day to first pour.
Even better? This method doesn’t just save time—it gives you a cleaner, crisper seltzer that lets fruit flavors shine. By clearing in the primary before kegging, you remove haze and yeast early, giving you a brilliant base and a more vibrant fruit flavor.
This post walks you through the exact process we use to ferment, clear, keg, and carbonate hard seltzer fast—without sacrificing clarity, flavor, or fizz.
Step 1: Ferment & Monitor Gravity
Thanks to Propper Seltzer Nutrient, fermentation usually finishes in 4–7 days. Once your gravity hits 1.000–0.996 and holds steady for 48 hours, you’re ready to move on.
Tip: Don’t guess—use a hydrometer or refractometer to confirm fermentation is complete.
Step 2: Clear with Super Kleer KC (in Primary)
You don’t need a secondary fermenter to get crystal-clear seltzer. We add Super Kleer KC directly in the primary and get great results:
- Add Kieselsol (D1) and stir gently.
- Let it sit for at least one hour.
- Dissolve Chitosan (D2) in 1 oz warm water, add it, and stir gently again.
- After 12 hours, cold crash to fridge temps (35–40°F).
Cold crashing helps settle particles fast. Within 24 hours, your seltzer will be brilliantly clear and already chilled for kegging.
Step 3: Transfer to Keg & Add Flavor
Carefully rack the clear seltzer to a sanitized keg, avoiding sediment. Then add your chosen flavoring directly to the keg:
- Crystallized fruit: Dissolve the packet(s) in 1 cup of water and briefly bring to a boil. Gently stir half into the kegged seltzer, taste, and add more as needed.
- LorAnn flavoring: Add half of the bottle to the kegged seltzer. Stir gently, taste, and adjust by adding more as needed to suit your preference.
Step 4: Force Carbonate – “Shake & Bake” Method
- Set your CO₂ pressure to 30 PSI.
- Shake the keg for 1 minute, then rest for 1 minute.
- Repeat this shake/rest cycle 3-5 times.
This method typically gets you very close to full carbonation quickly, often drinkable the same day. You can sample a small pour between rounds to check progress.
After shaking, drop the pressure to serving level (12–14 PSI) and let the keg rest at fridge temps. A few hours or overnight helps the carbonation fully stabilize and smooth out.
Note: For the most precise results, slow force carbonation using a carbonation chart is ideal—but when speed matters, this method delivers a cold, clear, and nearly fully carbonated seltzer fast.
