By all rights, wheat beers should probably be extinct by now. Lucky for us, the power of the palate has a lot to do with beer evolution! Though wheat beers are one of the earliest beer styles in history, it didn’t take long for ancient brewers to realize that barley was much better for malting and brewing. However, many cultures preferred the flavor of wheat beers. So much so, that when Germany adopted its famous beer purity laws, one of the first exceptions to the Reinheitsgebot was an allowance for wheat, so that the nobility could continue to enjoy the region’s celebrated wheat beers. Thanks, Nobles! Under Bavarian brewmasters, the style flourished, becoming the cloudy, silky, full-bodied weizenbiers rich with banana, spice and clove that we know and love today. American brewmasters put their own stamp on the style, producing a variant that celebrates the crisp, malty, refreshingly drinkable aspects of a classic wheat beer, with more hop character and a more neutral yeast influence. However you cut it (or brew it), wheat beers are the perfect warm-weather sipper. And a testament to good taste!
