How to Make Hard Seltzer

Notes from Brad, Northern Brewer Development Brewer:

Hard seltzer waters are all the rage these days, so why not ride the wave? This kit is a very simple and straightforward fermentation consisting only of dextrose (corn sugar). The resulting product is boozy water, coming in right at about 5.5% ABV and is then flavored with all-natural crystallized lemon strawberry powder.

To ensure the best results with this kit, be sure to follow the directions and add the yeast nutrient packets according to the schedule described. Adding yeast nutrients in staggered additions ensures that the yeast remain happy and healthy and will avoid any off-flavors that stressed-out yeast can generate.

The fermentation will be complete within 2 weeks or so, but be sure to leave this batch sit for a few additional weeks to allow the yeast to drop out of solution and leave behind a clear beverage.

We have also included more flavoring than likely needed, so you can decide how intense to make the flavor - add a little at a time and taste until you are happy with the taste."

Yeast found wanting

Yeast included in the kit never really activated. Had US-05 on hand, pitched and fermentation began soon after. ABV ended up around 4.5%..

Hard seltzer not hard

I followed this recipe to a “T”. My OG was 1.032, great. During fermentation it bubbled but not energetically. After 4 weeks it still would “gloop” (bubble) occasionally but I decided to bottle and condition and hoped it would come out as it should. My FG was only 1.024, so my abv was very weak. After 2 more weeks of conditioning, the taste is very good, you can see CO2 bubbles rise in the bottle after a small pour, and short lived head in a glass. But it is below my expectations. I don’t believe it is supposed to rival a Truly or White Claw, but I hoped it would be more lively. It is more like an old soft drink rather than a hard seltzer. Maybe my caps leaked, I don’t know, but probably not all of them leaked. At least it has a good taste.

Great Easy to Make Seltzer

This was my first attempt at a seltzer and I am very happy with the results. I used all the flavoring and am happy with the taste profile, the strawberry definitely comes out more than the lemon and is bit 'syrupy' although this is generally true of crystal or extract flavoring. In fermentation it looked somewhat cloudy, but pours clear out of the bottle. If you're used to White Claws or Truly this will seem under-carbonated, and it should definitely condition in bottles for at least 3 weeks. I didn't have any issues with the acidity, but I do have access to very good water. It was easy to make and I would definitely do another batch in the future.

Makes a good Seltzer but watch your PH

I choose the Lemon and Strawberry Seltzer Kit so I could learn about Seltzers and nutrients. Very easy to make and I like the flavoring. I ended up using ¾ of the flavoring but you can use it to your taste. One problem I had was with just water and sugar the PH drops very fast. I ended up at 3 PH. If bottle conditioning the yeast will not work at that low PH.

This is still in the secondary fermenter, so I am not sure how it will turn out.

The one issue I will mention is you have to be very careful about water chemistry, hardness. I have a water softener, but have never had an issue with my water being too soft when doing beer. It seemed like it didn't start fermenting, because I didn't see any action in the airlock the next day. I took a SG reading and could tell it had fermented some, went from 1.030 to 1.020. Then it stopped. Did a little research and found out that it is common for seltzers to get very acidic very fast, and then they stop fermenting. I don't have a PH meter so I took a shot in the dark and added a little baking soda. I would have preferred gypsum, but did not have any handy. Also continued to add the yeast energizer that came with the kit as specified. Fermentation restarted and SG dropped to 0.990.

It sounds like this can be a common issue. I would think they would mention this in the instructions. I won't try another batch until I get a PH meter. It was definitely a learning experience for me. This may help my beer in the future.
