How to Make Hard Seltzer

Notes from Brad, Northern Brewer Development Brewer:

Hard seltzer waters are all the rage these days, so why not ride the wave? This kit is a very simple and straightforward fermentation consisting only of dextrose (corn sugar). The resulting product is boozy water, coming in right at about 5.5% ABV and is then flavored with all-natural crystallized citrus and mint powder.

To ensure the best results with this kit, be sure to follow the directions and add the yeast nutrient packets according to the schedule described. Adding yeast nutrients in staggered additions ensures that the yeast remain happy and healthy and will avoid any off-flavors that stressed-out yeast can generate.

The fermentation will be complete within 2 weeks or so, but be sure to leave this batch sit for a few additional weeks to allow the yeast to drop out of solution and leave behind a clear beverage.

We have also included more flavoring than likely needed, so you can decide how intense to make the flavor - add a little at a time and taste until you are happy with the taste."

1st-try Hard Seltzers

The kits arrived quickly as always and had everything needed. Hard seltzers are a very simple Brew-Day activity compared to IPA's, Stouts, and Porters (though those are pretty easy too!). I brewed a double batch in my 14-gal brew kettle and split the results into two identical fermenters. if you've heard that these will ferment FOREVER - it's true! These have been going now for 4 weeks and are still gently bubbling about once every 5-10 seconds. I started giving them a nice swirl twice a day after two weeks just to keep the yeast and the nutrient/energizer mix actively in suspension. I expect the fermentation will finish pretty soon, and am going to take a gravity reading this weekend just to get an idea how close they might be. Still a ways to go since these will need some aging with gelatin finings plus a cold crash to clarify. I'm anxious to see/taste results!

Great Seltzer

This turned out great! I added an extra pound of sugar to my recipe. Ended up with final alcohol content of about 6%. Great flavor and easy to follow instructions. I’ll be ordering this again soon!

Seems good so far.

First of all, Northern Brewer makes great kits. They are complete, have good directions, high quality ingredients, and are nicely packed. They are the best kits I've used.

As of writing this review, my Mojito hard seltzer is still in the primary fermenting away, just past the three-week mark. It's at about 1.001 SG (corrected for temperature) and seems like it still needs to go a little bit lower in SG to make the final expected ~5% ABV. The Lalvin EC-1118 yeast was very slow to start in my batch - at the 72 hour mark fermentation had just barely started. When I make this again, I'm likely to pitch two packets of this yeast, and may even make a non-malt-based yeast starter to try and get it to ferment a little quicker. I will say that the taste of the wort has a mojito-like flavor *even before* adding the flavor packet, so I expect this will turn out to be quite tasty!

Bottom line - very nice kit and I expect a tasty product when I go to sample it after bottling and bottle conditioning.

Great taste, fermentation needs work

The flavor is great, I'm drinking it as I type this up!
I had high hopes for this seltzer, sadly the fermentation never took off. I'm an avid homebrewer and my process was flawless.
I had some old CBC1 dry yeast that I ended up pitching on day 3 and then fermentation started, but very slowly. After 3-4wks fermentation was over, but my FG was in the low 20s, so the ABV only came out to around 2.5% or less.

Since then I've brewed another seltzer with some different procedures on the cold side. Everything went great and fermentation completed in 4 days for that brew!

Next time I'll just buy the mojito flavoring, the yeast and nutrients they gave were worthless.
