A strong but pale Trappist-style ale, lighter in color than Dubbel but with a higher gravity and alcohol content. The addition of clear candi sugar dilutes the malt bill, which helps preserve the golden color and makes the body deceptively light for a beer of this strength. Spicy and fruity with a gentle sweetness and hints of alcohol throughout leading to a dry and mildly bitter finish.

The next step up from Dubbel in the monastic beer classification, Tripel is higher in alcohol than Dubbel but is actually lighter in color and body. One of the better kits tested and tasted so far

Am going through 14 kits of NB one gallon batches with 4 one gallon fermenters, including 5 kits of this Belgian Ale. The two in glass showed no signs of bubbles, but did get to FG 1.01, maybe the glass fermenters leak. The plastic fermenters bubble fine and don't break. The Belgian Ale tasted good after three weeks of conditioning. Am going three weeks in fermenter and three weeks conditioning on all going forward. I bottled one kit before reaching 1.01 due to a location change, it tasted terrible and had to dump it out. My fault. Am trying one Belgian with all the malt and some extra water, sugar and yeast. TBD on that one. Low cost experiments before diving into an expensive all grain set up.

Came out great.

Belgian Tripel came out great, perfect hop level. I let it get too cold early on (45 F) and it didn't reach final ABV. Still tasted great.

Belgium Tripel

Just did the boil 4 days ago. There was a very vigorous fermentation, needed a blow off tube. It is very cloudy so far very light tan color. The OF was 1.066.

Good stuff, closer to a dubbel than a tripel

After a bit under two weeks of primary, the final gravity stalled at 1.016. Tech support recommended 1.004-1.010.
Tasted good after another two weeks in bottle conditioning.
My batch had a taste more typically found in dubbels: a bit more caramel-y and nutty.
I plan on making this again and perhaps adding some other arromatics.
