Houblonmonstre Tripel IPA Extract Beer Recipe Kit
Once upon a time a poor homebrewer was lamenting the lack of time that the modern world allowed him for his hobby. He had the ingredients for a batch of Tripel and a batch of IPA, but the demands of home and work life were such that he had no opportunity to brew them, and so he cried himself to sleep. While he slept, a collective of Ardennes Forest Beer Gnomes (Houblonmonstres, in Flemish) came into his house and took pity on the poor homebrewer. They decided they'd brew his beer for him. Unfortunately, the Gnomes were already three sheets when they broke into his home, and so they combined the ingredients for the two batches. This recipe is the result of their drunken meddling: an elegant and pale strong abbey ale carpet-bombed with American and continental hops. You're going to have to do the brewing yourself, though.
Due to the high starting gravity of this kit, we recommend pitching multiple packs of yeast or preparing a yeast starter for best results.

Beer was ok. If you are going to use this kit, you need to use muslin bags for the hops, and do a full 5 gallon amount of water, not the 2 and a half recommended
Brewed the extract kit, fermented it, bottled it, and tasted it. Great Belgian Tripel kit. No IPA comes through. If you want some IPA flavors and aromas, I'd recommend adding some more hops to the kit.

Brew day on this was 3 months ago plus a week. I was grateful for the reviews warning me to use a blow off assembly. Sixteen days primary and 33 days in secondary at 66 degrees. I followed the directions with two variations: adding Irish moss near the end of boil and increasing sugar at bottling time up to 5 1/2 oz. instead of 5. At 4 weeks from bottling it is nicely carbonated. Fermentation temps were mid to upper 60's F. The Belgian yeast character is a little understated, but the first bottle tastes great. I will cellar this until June and expect it to be a prize in November. It is clear and beautiful.
