Saison de Noel Extract Beer Recipe Kit
Deceptively dark and beguilingly complex, this holiday specialty is brewed in the tradition of Belgian farmhouse ales. Unlike most saisons, intended to refresh and sustain farmers doing manual labor, this one is engineered to complement rich holiday fare and sustain you through long winter nights. A generous malt bill with highlights of butter toffee, chocolate, dark fruit, and bread tangles with the earthy, spicy funk of Wyeast French Saison strain and a single addition of bittering hops to strike an evolving balance.
The porter-like color tricks your palate into expecting burnt, roasty notes and perhaps even a full body, but the reality that hits your mouth is a lean, attenuated beer with a snappy, estery, slightly tart edge and a warming, peppery finish. No spices here - all the complexity comes from malt, yeast, and your skill as a brewer! Brew now for Christmas, and stash away at least a six-pack of this age-worthy saison to enjoy on into the spring.

This was the third brew i made and best one yet. have shared with a few friends who have loved it
Having brewed lots of ales over the last 35 years or so I was very pleased with this kit and the results it produced. I did add a small quantity of grains of paradise at the end of the boil as well as a pound of amber soft candi sugar and 2 or 3 ounces of flaked wheat to the provided grains for better head retention. My original gravity was about 1.072 and my final gravity using the Wyeast 3711 French Saison yeast for the first time ever was 1.003! (That is some monster yeast!) After only two weeks in the bottle the beer was already delicious and nicely carbonated: dry but yet with a nice mouthfeel; smooth and spicy yet with some mild but pleasant fruity esters and with a creamy, rich head. I would definitely brew this one again!
A friend that I brew with tried this first and gave me some. It is without a doubt my favorite brew, so I couldn't resist getting my own kit. Northern Brewer rocks!
I have never had a bad experience with Northern Brewer. However, their patience runs thin as they constantly ask for product reviews only a couple weeks after delivery. If any body should know, Northern Brewer should definitely know, these beers take more than a couple weeks to generate appropriate reviews. That said, I did get two big mouth bubblers a while back which were 5 star right out of the box! And I'm totally excited for this Saison!
