Yeast Nutrient is a mixture of diammonium phosphate and food-grade urea that nourishes yeast, ensuring that it remains healthy throughout fermentation.
Add one teaspoon per gallon recommended for wine, mead, and cider.

It is a chemical additive , it works as it should.
Hard to tell what it would be like without it, get good yeast performance with it, add very small amount because I tasted it, and it is awful. Know that probably won't matter but nice to have healthy yeast. Cheap insurance.
