Oak Cubes - French medium toast
AKA oak beans. Medium toast French oak cubes bring aromatic sweetness, full mouthfeel, and notes of fresh fruit, cinnamon, and allspice. Look for undertones of creme brulee and milk chocolate.
Crafted from air-dried oak staves and fire-toasted by expert coopers in California, oak cubes allow winemakers to impart terrific oak flavor and aroma to wines aged in glass carboys, plastic buckets, or steel tanks. Use a single variety or create your own custom blend of different toasts and woods.
Suggested dose is 2.5 - 3 oz per five gallons; can be added during fermentation or aging. Leave wine in contact with the cubes for a minimum of two to three months.

At least for this beer, the half with the oak cubes had the best subtle, vanilla and smoky flavor. It was an excellent complement to that beer. I will be buying these again!I used the entire package for 3 gallons.
I bought these to try oaking a batch of dry apple wine, and while it's still aging, my last gravity sample was extremely promising. Just 2 oz. of cubes have already lent lovely vanilla/spice flavors and a touch of tannin, and by the time bottling day arrives, I think they'll have brought a really nice complexity.
