The yeast was very fresh, agitated in the pack and then added directly to the wort. I started getting fermentation within 12 hours and overall worked really well (OG from 1.096 to 1.009 in 7 days). The final product worked out really well! This yeast does take a long time to settle (4-6 weeks), so plan accordingly.

American Ale Yeast
Used this yeast for a Dragon’s Silk recipe kit. Did a 2 liter starter for it and pitched at 48 hours. This yeast took off in 4 hours and chewed though 80% of the sugar in 3 days. Surprisingly it didn’t need a blowoff hose, but it did seem very active. No off smells or flavors coming from the beer, clean.

Wyeast 1056 American Ale - Good to order when it is not Summer
We did the Plinian Legacy and hit 1.080 O.G., and the Wyeast has been successful in doing the job. Just racked a few days ago after 2 week primary fermentation. Gravity was 1.020. We are hoping to chew off a few more points.
