The beer is still in the fermenter. Seemed to work just fine.
Took awhile for the yeast to activate and when I I put it in the wort it was slow again to build a head. Fermentation only lasted 5 days. ABV came out to about 6.1%.
All went well with this kit, although I can see where some of the frustration with the supplied instructions in other reviews come from... being a massive "newb" to brewing myself, it took a bit of homework to figure out that both packs of yeast gets pitched as soon as the wort is cooled and aerated. The "secondary fermentation" had me a bit confused, as soon as I got the process sorted out in my head, it was easy. Cracked into it last week to check, after 5 weeks, and it still needs some time in the secondary fermenter, but I have high hopes for this batch. Stoked to see how it changes with cellar time in the bottle as well. Also, keep an eye on the fermentation temps, the Wyeast 1728 Scottish Ale yeast does seem to like it a bit cooler...
This Yeast worked great. My Wee Heavy was at 7.6% ABV after 2 weeks in primary. Only half way through secondary fermentation.
Scottish ale yeast arrived in fine condition and brewed another mighty fine wee heavy.
