This is indeed a "big beer"

We followed the recipe save for not adding the corn sugar, and we still fermented the beer to almost 11% ABV! Initial samples tasted like a solid saison but needs to age for another 4-6 weeks in a secondary. The flavor was a little harsh, which is expected right after fermentation completes on such a big beer. Really excited to see what the finish product tastes like!

Wow!

This was my first time using a liquid yeast pack vs. dry yeast. I smacked both packs and only one started to inflate (didn’t burst the food inside the other one on accident). But poured both packs into primary ferm. Poured the yeast food pack into the wort as well when I discovered it hadn’t been opened. Within 3 hrs my wort was bursting at the seams!!! This active yeast really kickstarted the whole beer and it tastes great after primary! Already with a (3-5%) abv.
