Excellent customer service when I was concerned about product on delivery as it was warm. Worked great on a fresh blackberry wine with reduction from 1.090 to 0.996 in 13 days

I used this to make some hard Komubcha and it worked great, no issues. Booch was pretty tasty.

Used in a cider recipe and got the subtle sweet flavor I was after. No issues, but I did notice a increased amount of sediment in the bottles.

Promising for Cider

Last winter I tested 7 different yeasts with the same starting apple juice. 4783 (Rudesheimer) gave one of the better "fruit forward" tastes. I'm starting a larger run with much better fresh juice this season.

Note that I added yeast at only about 1/3 the recommended amount (to keep things slow), I'm fermenting cold (10 to 15C), and will rack it once the SG has dropped to about 1.025 or so. Once it starts to clear, I'll rack again into final sealed bottles and store at about the same temperature for a couple of months to allow MLF to take place and soften up some of the acidity. At the time of the midpoint racking, and without MLF, the taste was quite harsh, as if the flavors were very delicate and overpowered by the acid.

Definitely worth a shot if you've got patience!
