Wild yeast isolated from Belgian lambic beers. Produces a pie cherry like flavor and sourness along with distinct Brett character. Ferments best in worts with reduced pH after primary fermentation has begun, and may form a pellicle in bottles or casks. Works best in conjunction with other yeast and lactic bacteria to produce the classic Belgian character. Generally requires 3-6 months of aging to fully develop flavor characteristics. Apparent attenuation: Flocculation: medium. Optimum temp: 60°-75° F

Can I used this as an addition to the Dawson's Kriek Extract kit in order to achieve more sourness? The Wyeast 3278 Lambic was already pitched 7 weeks ago but I'm worried I'm not going to get as much sour as I'd like and I've read that I should be ok using this at this point to achieve more sour.

BEST ANSWER: Brett will not produce sourness in most cases. If you want sourness look to lactobacillus- Omega yeast makes my favorite blend
What is the cell count of the Wyeast Brett cultures? I can't find that info anywhere. I'm assuming it's lower than the standard ale smack packs, though I've also heard that it's higher than the White Labs brett cultures.

Can I add this to the Dawson's Kriek kit to get more of a sour effect in the finished product? The beer was brewed 7 weeks ago and is sitting on the tart cherry puree currently and I want to make sure that I get a good sour effect in the beer and was told this was a good choice.
