BREWER’S YEAST FOR DELICATE & HOPPED BEERS
German ale brewer’s yeast producing subtle fermentation character. Depending on the conditions tend to present floral and balanced fruity character. Ideal for delicate beers such as German Kolsch beers, Belgian Wits and some versions of Session Beers. Suitable for heavily hopped beers and has the ability to form a large firm head when fermenting. Its lower attenuation profile makes for beers with a good mouthfeel.
- Fermentation Temperature: 59–68F
- Attenuation: 80–84%
- Alcohol Tolerance: 9-11%

Love this yeast. Clean and fast.
The yeast worked very well for my kolsch all-grain recipe. No real need to use liquids when you have these easy to use dry products available, and I’ve brewed for 30 years!
Unique esters in this yeast when fermented above 73 degrees, fairly neutral around 65. Worked well in a blonde ale. Has a "Euro" taste to it.
Good stuff. Made an ipa, fermented in the mid 50's. Got to 1.009. Cleared in the keg.
My Kölsch turned out to be the best one yet. Very pleased with Safale K-97 as it was my first time using it. I will definitely be using this on my future Kölschs!
