Doubling down on our most popular recipe kit of all time, we took our famous Dead Ringer recipe and upped the ante - significantly. Double Dead Ringer is a real juggernaut coming in at ~11% ABV, 85 IBU, and featuring a whopping 12 oz of an American classic, Centennial hops. The massive doses of Centennial create a firm bitterness and a huge grapefruit citrus, floral, and slightly earthy aroma and flavor balanced by an aggressive malt profile of slightly crusty bread with undertones of sweet caramel and toffee. This imperial IPA is not for the faint of heart.

Brewing Notes:

  • Style: Double / Imperial IPA
  • Fermentation Range: 65-70°F
  • Original Gravity: 1:100

Tasting Notes:

  • Aroma: Complex aromas of substantial hop character interlaced with deep bready malt notes with a hint of semi-sweet caramel.
  • Appearance: Burnished orange hue with a slight dry hop haze. Firm, tightly-laced white frothy head.
  • Flavor: Intense citrus and floral hop flavors exhibiting a bracing bitterness, prominent malt character with faint hints of toffee and sweet caramel.
  • Mouthfeel: Medium to medium-full bodied with a lingering bitterness on the tongue.

Note: To successfully pull off this recipe, we have formulated this kit to produce a total of 6 gallons of wort to account for losses to the preposterous amount of hops added during the boil and the dry-hop stage. The resulting batch will still end up at 5 finished gallons, but leave you with enough volume to avoid getting hop and yeast particulates into your bottles or keg during packaging.

“Well, it’s been a while since we have released an Imperial IPA kit, and now seemed like as good a time as any. We’ve taken our all-time best selling recipe kit and cranked it up to 11(%). This leviathan of a beer clocks in at a specific gravity of 1.100 and flaunts a total of 12 ounces of Centennial hops to create a colossal flavor experience. Bracing bitterness and somewhat excessive hop flavor and aroma are what make this imperial IPA stand out amongst the average offering.

To successfully pull off this recipe, we have formulated this kit to produce a total of 6 gallons of wort to account for losses to the preposterous amount of hops added during the boil and the dry-hop stage. The resulting batch will still end up at 5 finished gallons, but leave you with enough volume to avoid getting hop and yeast particulates into your bottles or keg during packaging. Be sure to pitch a ton of yeast at this one to ensure a healthy fermentation, and be extra certain to oxygenate/aerate the wort thoroughly to avoid undue stress on the yeast. Just bottled it.

I love the dead ringer, so I had to try the double version. Brewed it about 6 weeks ago and bottled it 3 days ago. I tasted the new beer ( not carbonated yet) and it tasted good — kind of boozy. Can’t wait to uncork the first bottle in a few weeks

Double Dead Ringer is "Dead On" Good!

This kit produces 6 gallons, so split the fermentation into two gallon batches. I put on in my 6-gallon carboy and the second in a 5 gallon glass jug. Other than that, the whole process was as normal and smooth as all other kits. I did the brewing with a buddy that is experienced and another buddy that is just learning the ropes. We have all tried a bottle or 2 and the beer is an excellent sipper! The hops and alcohol content are both on the high side and they are well balanced. I'm expecting this to get even better over the coming weeks.

Needs a bigger hop presence to balance the alcohol

I had to put a 20 pound weight on my primary bucket because the yeast pushed off the lid. Recommend not to over heat due to scortching.

Wearing 5 Gallons

Original kit lacked the DME, but you were quick to replace and the cook went well, primary fermentation was vigorous, and measured 1.050 specific gravity in transferring to secondary fermenter. Unfortunately, upon settling the glass fermentation tank down, the tank blew out! It was looking so promising and bottling was only a few weeks away! Wearing 5 gallons is not nearly as much fun as drinking it. Will need to order again, and maybe switch to a plastic secondary tank. Thoughts?
