Enjoy a lager-like profile without the wait!

Legend of Lutra™ is a recipe kit we have formulated to really let this unique and clean yeast/kveik strain shine. The simple malt base is inspired by the pervasive American Lager style and then bolstered with a small amount of light caramel malt to lend a golden hue, while a modest dose of hops provide just enough bitterness to balance. The real star of the show is Omega's Lutra™ kveik strain and its incredible versatility. Temperature control is not needed with this strain - ferment it at room temperature for a lager-like finish, or let it crank at 90F and you will be hard-pressed to find a flavor difference. This yeast strain is a game-changer and is legendary in its own right.

Brewing Notes:

  • Style: Hybrid Ale
  • Fermentation Range: 68-95°F
  • Original Gravity: 1.048
  • SRM: 4
  • IBUs: 15
  • ABV: 5.1%

Tasting Notes:

  • Aroma: Slightly bready malt notes with very faint caramel hints. No hop aroma. Clean fermentation profile with little to moderate ester profile depending on the fermentation temperature.
  • Appearance: Deep golden straw color with good clarity. Bright white foam head with moderate persistence.
  • Flavor: Low to moderate malt flavors of fresh white sandwich bread with low bitterness and no hop flavor. Low yeast character with a nearly lager-like crispness. Low to medium-low fruity ester profile depending on fermentation conditions. Similar to American lagers.
  • Mouthfeel: Light body, easy sipping with moderate effervescence. Quick finish with no lingering palette sensations.

Kveik Yeast From Omega Yeast! Ferment At Higher Temps!

From Farmhouse to Fementer: Your Guide to Kveik Yeast

Notes from Brad, Northern Brewer Head Brewer:

“This recipe may seem overly simple, but that is for a reason. The true purpose of the intentionally basic grain bill and hop schedule is to highlight a truly unique yeast strain. Omega Yeast has released a single strain of Norwegian Kveik, and the results from this strain are truly impressive.

Originally isolated from Omega’s Hornindal Kveik yeast blend, Lutra™ is a rapidly fermenting yeast strain with an incredible neutral flavor expression within a wildly remarkable temperature range. Fermented at traditional ale temperatures around 68F, Lutra™ produces nearly lager-like beers with an exceptionally clean and crisp finish with minimal ester production. On the other end of the temperature spectrum in the low 90F range, Lutra™ remains quite clean yet expresses a gentle ester profile that brings to mind the flavors of a traditional Kolsch strain. In addition to its incredibly clean and crisp flavor profile, Lutra™ is an absolute beast with an insatiable hunger for malt sugars - full attenuation can be achieved in mere days. With lower temps, I have found that this recipe can attenuate in 4 days, while elevated fermentation temperatures pare this down to 3.

Of course, there are many factors that influence its performance, but it is a very rapidly fermenting yeast strain to be sure. Ensuring proper aeration/oxygenation will give the yeast cells everything they need to chow down on your wort to flip a batch at break-neck speed. Although temperature control is not particularly important, taking this strain up to normally forbidden heat levels will not be a detriment to this recipe. Go ahead, crank this one up and let it rip - you will be surprised at how quickly and cleanly Lutra™ gets the job done, and then it seems to magically drop out of suspension leaving a relatively clear beer in short order. It may be a “new” Kveik strain to most, but Lutra™ is certainly a legend in the making.”

A Perfect Beer for Summer Brewing (...and drinking!)

As a newbie home brewer, I am really enjoying trying new recipes, but with the heat of summer upon us, keeping the fermentation temperature down has become a real challenge, if not impossible, without more equipment. My fermentation chamber is my basement which, for most of the year, stays in the mid 60’s. With a heater wrap and temperature regulator on the fermenter, I can dial in the optimal temperature for whatever brew I’m fermenting. However, when my basement hit 70 earlier this month, I started looking into cooling solutions. That’s when I got the promotional email from Northern Brewer for the “Legend of Lutra” extract kit. It was very timely, calling attention to a yeast that could handle temperatures up to 95 degrees, Omega’s “lutra Kveik.” I would have no problem leaving the brew to ferment in my basement, no matter how hot it got down there.

I’m more of an IPA drinker, but I do love a good ice-cold lager during the summer months, and wow this beer is perfect! I just popped one for the first time over the weekend. It had only been in the bottle for 7 days, but I wanted to give it a taste. This yeast is a work horse! The beer was fresh and flavorful, and ready to drink in such a relatively short turnaround time. To me, it was a lager without the lagering. Sure, some might say it’s “cheating,” but it solves the problem of not having a cooling system. Not only that, but the fermentation went quickly! After initially using a blow-off tube to handle the day-one excitement, the batch settled down and did the Lutra did its thing. I moved the batch to the secondary fermenter after two weeks, and then a week later, I bottled it. One week after that, I had my delicious “summer lager!” I was so pleased with the Lutra yeast that I used it for one of my own concoctions, an attempt at a rauch bier. I want this beer for September, but it will probably be ready in August! It’s nice to have an option of a lager-like taste without having to invest in a bunch of cooling apparatuses and be able to just let it go in my hot summer basement. (NOTES: Fermentation temperature averaged around 75 F. I used one packet of dry Lutra Kveik yeast. Start to finish it took 4 weeks, and I ended up with 5.5% ABV)

Legends of Lutra

I have brewed this twice. Both times I used the liquid yeast Lutra Kveik OYL-071 with proper seltzer nutrient. The results are fermenting complete in 3 days. After a week I cold crash to really clear it up for 7 days. I then brin back to room temperature and bottle let it sit for a week at room temperature 80 degrees. Then refrigerate , I tasted my first batch yesterday and it was really good. Similar to a yuengling.

Lutra Extract Kit

Just bottled yesterday so can't accurately rate the final product but everything looks good, Would like to see the kits come with yeast and priming sugar as the cost per beer certainly rises when those are needed to be purchased separately. Also, shipping costs are twice what other Homebrew retailers charge and take an exceptionally long time to arrive, 9 and 13 days respectively regarding my orders. Customer service is A1.
